What's for lunch?
The dreaded daily question and how I'm fueling myself midday
Lunch has always been annoying (unless it’s a sunny Saturday and I’m ordering a salad, fries, and a spritz) and now that I have 4 precious hours of childcare per day and lunchtime is smack dab in the middle of those hours, I honestly dread the afternoon rumble in my stomach. I am always looking for something quick, easy and filling but not too heavy.
The reality is, I’m eating leftovers most of the time. If you’re cooking just to eat one meal you’re doing it wrong. If you don’t have enough for leftovers double the recipe! Of course we have nights where we order takeout or end up without leftovers and then I am whipping up something that is super low effort. Which leads me to my favorite quick & easy lunches!
What’s for lunch?






Cold Sesame Noodle Salad- This is delicious with any protein (or none at all). I usually use rotisserie chicken because it’s the easiest but you can use shrimp, salmon or whatever is speaking to you! It holds up well in the fridge so you can prep it ahead of time for the week.
Deli-Egg Salad with Crispy Prosciutto- I love to boil some eggs on Sunday for a quick snack or some egg salad. The crispy prosciutto is optional of course but it’s super easy to make and really takes it to the next level.
Pesto Eggs in Purgatory- This recipe is something you can truly make out of nothing! It takes just a few minutes and it’s insanely good.
Chicken Le Bowl- If you use microwave brown rice, you can whip this up in no time at all. It’s been a staple for lunch in my house for years.
Turkey Chili- This is always in my freezer so when I’m really in a pinch for lunch (or even dinner), I just heat up some chili. If you don’t own Souper Cubes they are the best for freezing soups!
Simple Chicken Salad- When all else fails, make this easy chicken salad. I love it plain, with crackers, on Hawaiian rolls, you can’t go wrong.

Kerastase Anti-Frizz Glaze Milk- My hair stylist recommended this spray to me and it’s the only thing I’ve ever tried that truly eliminates all the frizz in my hair. It is magical!!! 10/10 recommend.

Ruggable Ivory Rug- Having a washable rug is a game changer. We are obsessed with ours and love the fact we can throw it in the washer when it gets dirty. For our non-washable rugs, we love this Bissell Green Machine!
Striped Sweater Polo- I love a good J Crew sweater and I got this in striped and gray. You can also add a monogram which is so cute!
