Why is it that we associate slow cookers with cozy winter meals? Because in reality, it’s the perfect way to make a sweat-free dinner when it’s hotter than the sun outside. I’m determined to make summer crockpot meals a thing, so I’m sharing some favorites that will fit seamlessly into your weeknight rotation. And if all else fails, just dump a jar of salsa over some chicken and call it a day. Works like a charm every time.
If you don’t own a slow cooker already, they’re very affordable and VERY easy to use. The true beauty of a slow cooker is being able to dump a bunch of ingredients in it in the morning and by dinner time you have your meal ready for you. They’re perfect for a beginner home cook, people with lots of mouths to feed, and for those of us who have the fear of undercooking food (usually chicken causes the most anxiety). You’ll be annoyed you didn’t buy one sooner.
My Slow Cooker Recommendations
Most slow cookers fall in the under $100 range, although some get fancy and can cost you $200+. I can’t speak for the pricey ones because my $50 crockpot works just fine. I’ve linked a couple great, affordable options below if you’re shopping for one!



6-Quart Crockpot- This is the crockpot I have and I love it! The reviews say it runs on the hotter side, but I personally have never had an issue. On major sale right now!
8-Quart Large Crockpot- Currently on sale and perfect for a big family!
2-Quart Round Crockpot- If you’re wanting to dip your toe in the slow cooker life without a big price commitment, this $20 option is great. It’s small, so you might have to adjust most recipes you find to about half.

Slow Cooker Enchilada Casserole- If you love enchiladas but cannot be bothered with rolling up each individual tortilla or turning on your oven, this one is for you.
Slow Cooker Shredded Steak Tacos- Dinner party approved! Everyone loves a taco night. Corey also requests this for meal prep during the week. Delicious in quesadillas, burritos, and bowls too!
Salsa Verde Chicken- This is the recipe I make when I don’t feel like cooking at all but I want something healthy. I love this for meal prep as well.
Carnitas Taco Bar from Seriously, So Good- One of my all time favorite recipes! I have several friends that request this every time they come over. I happily oblige. Fun fact: I demoed this cookbook recipe live on the Today’s Show! It was a hit!
