Spring time meals that won't leave a sink full of dishes
Spring has officially sprung and this one feels extra special because it means I have officially survived the newborn trenches and the winter scaries (a lethal combo if I do say so myself). I’m coming out on the other side with a giggly 6 month old and 80 degree weather and I am really feeling like myself again!!!
As we gear up for a busy summer, I wanted to share some of my favorite go-to one pan meals that keep my weeknights easy and mess-free. There’s always at least one of these meals in my weeknight rotation, most recently the Chicken Feta Meatballs with Turmeric Lemon Rice. It’s just so easy to whip up, it’s super healthy, and there’s always enough for leftovers. Hope you enjoy!

Freezer-Friendly Green Chicken Enchilada Skillet- I made this when I was super pregnant to prep for postpartum and it truly saved me in those early sleep-deprived weeks. It will forever have a special place in my heart!

Teriyaki Turkey Skillet- The latest addition to my Trader Joe’s Series! Whether you make the teriyaki sauce from scratch or use store-bought, this one is a winner.
One Pan Jalapeno Cheddar Sausage & Rice Skillet- This has been a go to meal for years now. It’s spicy, savory and low lift. It’s something your whole family will crave!
Egg Roll Bowls- We are always adding this one to the weekly menu because it’s just so damn easy and has everything I want in a dinner. It’s one of my most popular recipes from the Trader Joe’s Series for a reason!

Williams Sonoma Familie Rose Everything!- I am obsessed with everything from this collection!! My measuring cups and spoons have been bringing me so much joy for spring baking and I gifted my sister the deviled egg platter for her birthday and she cried because she loves it so much.
Branch Basics- I’ve been doing a lot of spring cleaning and I just have to shout out my favorite non-toxic cleaning brand. I started using this because it helped with my eczema, but now with a dog and a 6 month old baby who puts everything in his mouth I can’t imagine using anything else!!
