A round up of my favorite & most popular cozy one pan recipes that won't leave you with a sink full of dishes. Plus a note about entering my wife era and embracing the present!
I have officially entered my wife era and after a couple weeks off I am so excited to be back in the kitchen. The last several months of my life have been so incredibly busy with releasing my debut cookbook, going on tour, getting a puppy, launching Harmony Blends (which sold out in less than 3 weeks!), and getting married. I feel like I have been sucked in a tornado and being able to finally slow down and reflect while we were on our honeymoon has me feeling so accomplished and grateful. It’s felt like my days, weeks and months were flying by as I accomplished deadlines and kept looking forward to the next “finish line.” Instead of feeling the wedding blues, I am honestly just so relieved to be able to focus on the present and not have an ever growing to do list. I am trying to keep this zen energy going throughout the holidays (wish me luck).
I will be sending out a full wedding recap, our checklist, day of schedule, and more details that made our big day special (and stress free)! In the meantime, I wanted to share a round up of my favorite one pan recipes to make in the colder months.
I think we can all agree that one pan meals are a year round thing, but one pan meals that are quick, easy to clean up AND serve up cozy vibes are a MUST for fall and winter. I put together some of my favorites so you don’t have to search. Enjoy!
One Pan Cheddar Jalapeño Sausage & Rice Skillet: Cheesy, slightly spicy, comforting and (as always) super easy to make. If you don’t like spice, you can take out the jalapeño, but either way it’s full of flavor and protein. Been loving adding some Harmony Ranch Blend in with the rice!
One Pan Rosemary Chicken Meatballs With Creamy Tomato Orzo: You guys went crazy over this one immediately and I am not surprised. Creamy and flavorful, you’ll wish you had doubled the recipe for leftovers on this one.
One Pan Lasagna Skillet: An easy weeknight dinner with all the things you love about lasagna with a fraction of the effort. This dish is made in one pan in 30 minutes that can be modified into gluten and dairy free if needed!
One Skillet Crispy Chicken Thighs & Creamy Lemon Garlic Orzo: Maximum flavor and minimal effort, this one became a Broccolini favorite overnight for being the perfect feel-good meal that is nourishing and delicious.
Fall Turkey Skillet: I have loved hearing what you guys do with this recipe from adding fried eggs to your leftovers for a seasonal breakfast hash to adding dried cranberries for a Thanksgiving vibe. This one is the perfect base for all those fall flavors you are craving made in one skillet.
Fall Veggie Sheet Pan Dinner with Maple Mustard Sauce: The most cozy, nourishing sheet pan meal you could get with all the flavors of fall with a sauce so good you could drink it.
Rotisserie Chicken Pot Pie: The ultimate comfort food with all the familiar, warm flavors you love while cutting out all the time consuming steps that you don’t. You can get puff pastry in almost all grocery stores in the frozen section and it is the cherry on top (literally) of this already cozy dish.
Skillet Vodka Chicken Parmesan: A delicious meal that feels really special without having 50 dishes to do. This is a one pan dish with the caveat that there may be one more pot if you serve it over your favorite pasta, but I think that is an easy and worthy addition.
One Pot Creamy Turkey Rigatoni: The recipe to make when you are craving a yummy bowl of pasta, made in one pot with minimal effort. The ultimate cozy, lazy dinner that can be easily modified to fit your needs.
Cheesesteak Skillet: I don’t know about you, but I love a good toasted, flavorful sandwich, especially in the colder months. This recipe is perfect for a weeknight dinner whether you want to serve it as is or inside a warm roll. It delicious both ways!
One pan meals from Seriously, So Good
One-Pot Chicken Pasta (pg 86): A creamy chicken pasta dish that is just the right balance of lean protein, veggies, carbs and healthy fats without the dairy overload that leaves you needing a nap afterward.
Sheet Pan Blackened Salmon Bites with Potatoes, Broccoli and Creamy Cilantro Sauce (pg 76): A hearty and healthy sheet pan meal with a creamy sauce that really takes it to the next level.
Sheet Pan Gnocchi with Burst Cherry Tomatoes and Pesto (pg 72): I don’t really know if you can beat this one considering gnocchi and pesto are involved. So many delicious tastes and textures come together to make this dish that is just as easy to make as it is to clean up.
One-Pot Chipotle Chicken and Rice (pg 104): A simple, warming dish with the OG comfort of chicken and rice that packs on the flavor with the addition of sweet heat with chipotle peppers and honey.
