The seasons are changing and there has never been a better time to get in the kitchen! I find so much inspiration when the weather starts to warm up (and cool down for fall) and cooking with in season produce feels so fresh and fun. I’ve included quite a few recipes below that will definitely get you in the spring spirit!
On another note, my company Harmony Blends, launched large individual jars of our spice blends today! Breakfast



Strawberry Milk Overnight Oats: My remake of the Strawberry Overnight Oats from Erewhon, but they won’t cost you $10 a pop and are a great (and yummy) source of protein and fiber.
Vanilla Cherry Cashew Granola: I am on a bigggg yogurt bowl kick right now and nothing goes better on top than some homemade granola. This recipe is the perfect amount of sweet and the textures are delish.
Double Blueberry Oatmeal Muffin: Yummy, nutrient packed muffins (think superfoods like oats, quinoa, amaranth, chia and flax) that will leave you feeling satisfied for longer.
Lunches + Salads



Spring Orzo Pasta Salad with Crispy Shallot Vinaigrette: When I first made this recipe, I ate it everyday for lunch for like four days straight and it never got old. It holds really well so it’s great for meal prep with some grilled chicken or shrimp!
Avocado Egg Salad: If you haven’t had egg salad in a while, I am telling you it hits so different in the springtime. It is the perfect lunch on some toast or a bagel!
Cold Sesame Noodle Salad: I really do just love a fresh pasta salad as the weather warms up and this one is no exception. The sauce with the noodles and crunch of the veggies is so bomb.



Strawberry & Arugula Salad with Blackened Salmon Bites: This salad is so good for you! It has the best mixture of sweet to savory to zesty flavors that all come together perfectly.
Rotisserie Chicken & Avocado Salad: I LOVE the flavors and textures in this one. It makes the perfect filling lunch or will earn you a hostess badge of honor at your next dinner party. A must make!
Citrus Avocado Salad: The dinner party salad of my dreams! This salad is not only as delicious as it is beautiful, it’s very simple to throw together and can be prepped ahead of time.
Dinners



Whipped Ricotta, Zucchini & Corn Pasta: This is my newest (and quite possibly most favorite) pasta creation. It takes less than 30 minutes to make and it will quite literally knock your socks off.
Pistachio Pesto Salmon: This was my first recipe I ever posted and it’s still one of my favorites. It’s soooo easy to make, delicious and healthy.
One Skillet Crispy Chicken Thighs & Creamy Lemon Garlic Orzo: This meal is quick and cozy with that extra zest from the lemon that you crave during springtime.



Carrot & Sweet Potato Miso Soup: Broccolini reviews are in saying this soup is “easy, hearty, healthy, and delish” and “so creamy and flavorful.” Try it for yourself!
15 Minute Air Fryer Fish Tacos: These tacos are quick and easy to make with maximum amount of flavor.
Lemony Garlic Kale Bucatini: This recipe feels like a decadent meal while getting in tons of greens (10, yes 10, cups of kale) and you can easily add in shrimp for some extra protein!
Treats





Lemon Poppy Seed Rice Krispie Treats: A zesty twist on a classic dessert resulting in perfectly chewy, citrus-infused squares of deliciousness.
Strawberry Streusel Muffins: The cutest muffins to bring to a little picnic or brunch and the crumble on top takes it to the next level.
Grain Free Glazed Lemon Loaf: This light and zesty loaf is the main character of spring. If you don’t want to use almond and coconut flour, here’s another version using regular all purpose flour.
Healthy “Reeses” Eggs: I think I originally posted these back in 2017, but they still hit!
Flora Farms “Farmarita”: You would think that a carrot margarita wouldn’t be that exciting, but I promise you it just WORKS. You will be obsessed!
